If you enjoy a hearty soup, especially on these cold winter days you may like this recipe. Combining meats with any sugar vegetables or with bread, rice or noodles is hard for the body to digest. This is a very filling soup that can be combined with bread or you might add noodles or rice. Cabbage is an amazing food source and goes extremely well with tomato. I use a crock pot and cook this for hours until the cabbage is tender. I call it No Guilt Soup. Its very simple:
Slice up about a third of a head of cabbage
Dice some onions (one larger or two small)
Use a jar of spaghetti sauce deluted with about 8oz of water - any kind you like
Add seasonings you like to taste like italian seasonings or rosemary or garlic powder but don't forget to add salt and black pepper. Black pepper is also great for the body. Garlic is also a spectacular source of nutrients so adding a clove or two is a great help.
After the mixture cooks for a while, add a can of pinto beans or any beans you like, stir the pot and continue to cook until the cabbage is tender. (1/2 cup of beans = 1 ounce of lean meat and adds vitamins, minerals and protein)
Cook slow on the stove or on high for the day in a crock pot. Like all soups, the longer it sits, the more flavor it has. This is about 4 large servings. If you add sugar veggies, rice or noodles then do not add meat. If you add meat not not eat with bread and do not add sugar veggies, rice or noodles. One average serving is about 300 calories because of the sauce added. If you want even more nutriton you an add some wheat germ. This is loaded with amazing nutrients and has a slight sweet and nutty flavor which will blend well with the soup. You don't need a lot. Wheat germ is high in calories...but good ones.
